    When you’re striving for authenticity, you’re working to be as true and honest to yourself as you possibly can … and in order to do that, you first have to figure out what your values even are, and get a grasp on what really matters to you. Pursuing attention, on the other hand, feels super externalized … all about other people’s expectations and reactions and responses. On a certain level, when you’re attention-seeking, you’re handing over your happiness to other people — because that thing that you’re doing? It only really matters if someone else is looking and (hopefully) approving.

Another Gwyneth cheater recipe!
This is the sweet breakfast version of the rice bowl… again inspired by hers but oh so much quicker and cheaper ;)
 One of TJ’s Sprouted Brown Rice Bowls
 One “just a handful of raw almonds” pack
 1/4 cup of water or almond milk
 a spoon of fresh preserves or maple syrup
Again i nuked the rice bowl for one minute- added in the extra 1/4 cup of liquid, nuked for another minute. 
Stir one pack of almonds roughly chopped. 

Top with sweetness of your choice.


VOILA! Yummy breakfast rice bowl in 5 minutes- not 3 hours ;)


(I was full after eating 1/2 of this- so I stored the rest in the fridge for the next day- it was still good on day 2!)

  4. The momma bunny brought me Gwyneth’s cookbook for Easter!

    I wanted to make the “savory rice” she talked about having at a Japaneese monastery…  I can understand how Monks and Gwyneth can spend 3 hours cooking dinner (a simple rice bowl dinner) but I dont have that kind of time on a weekday so I switched it up a bit ;)

    One container microwavable brown rice from TJs

    One bulb of bok choy

    1/4 package of sprouted tofu

    tsp or so of Ume (umeboshi) plum vinegar

    2-3 cloves garlic

    soy sauce/sesame oil scallions and nori to taste

    I cooked the package of rice for one minute in mirowave, added 1/4 cup water then nuked another minute

    Meanwhile i browned the sliced tofu- removed from pan.

    Tossed in the minced garlic and some blanced bok choy from the night before (I just toss the bulb into boiling water for a few seconds.. i like it still crispy and bright green) and splashed with the plum vinegar. Then chopped up the veggie leaves into bite sized pieces.

    Mixed tofu and porridge-like rice together.. top with remaining ingredients to taste.

    YUM!

  6. Lunch routine…

    Lunch is nearly always VEGGIE fueled… 

    I pack a lunch-bag in my car on days I’ll be out of town and generally stock it with yummy hummus, almond butter packets, tea bags, mixed nuts or homemade muffin or rye-crisp, an apple or banana, maybe a Lara bar or chunk of dark chocolate to feed my sweet tooth. 

    Favorite on-the-road choice is to pull over and pile up a bunch of veggies at a salad bar (preferrably Whole Foods cause they have the most variety but i dont always have that option) drizzle them with balsamic vinegar and scoop on some of the hummus from my lunch bag. 

    Alternately if I havent packed food… I foud that you can use your iPhones google map feature to find healthy options… just go to directions and type

    And you can come up with some pretty cool little spots! Last week I found “Our Daily Bread” in Downey Ca, a town not exactly rife with healthy options lol. They even had RAW desserts! (i didnt indulge I had already souped up on Spenda’d espresso that morning)

    At the hot bar at whole foods they often have yummy curries and asian sauce laden noodle/rice dishes that are vegan… but rather than load up on a ton of snooze-enducing coconut heavy carby deliciousness… I fill up my carton with steamed veggies and then drizzle just a little bit over the top so that I can have all the flavor, and none of the carbs in the noodles.

    When I’m home i’ll cook up something super quick… 

    Above is a standard rice/tofu/whatever veggie i have available standard: Drizzle olive oil in pan, add slices of tofu. While tofu is browning pop microwavable brown rice into nuker (i know theyre bad for you havent had time to make rice gah) Flip tofu and toss in shredded bits of kale. as kale is wilting and tofu browning drizzle all with a squeeze of lemon and some tamari soy. Serve rice topped with tofu veggie mix!

    Nom nom nom

    Now I’m starving ;)

     
  7. Veganomicon’s Mac and “cheeze”

    Seriously? 

    BEST VEGAN MAC AND CHEESE EVER!

    I do NOT like soy cheese at all- it tastes like rubber/plastic. 

    This however is amazing.

    While its not exactly like eating real cheddar goodness its a tummy friendly alternative comfort food and the meat eating bf consumed mass quantities without complaint ;)

    I like mine served on top of a layer of rosated or steamed broccoli… and topped with my favorite hot sauce.

     
  8. Totally butchered re-created Mario Batali’s Eggplant Caponata recipe for Christmas and made it into a Vegan pasta dish… it was DELISH if I do say so myself ;)

    Main substitutions…. skipped the sugar, added raisins instead of currants, and at the end instead of adding in 3/4 of a cup tomato sauce i added in a whole box of the good italian tomato sauce and then stirred in 1/3 cup of Tofutti Cream Cheese right before serving to creat a “cream sauce” feel.

    Dairy-free almond/blueberry muffins

    With Ground almonds subbed in for flour these bad boys are hardly low in fat… but it’s all unsaturated! And the health benefits fat outweigh the calorie concerns for me…

    Ingredients:

    Almond meal

    Egg

    Frozen blueberries

    earth balance

    Honey

    baking soda

    Vanilla extract.

    Simple, healthy, delicious.

I just thrashed my whole kitchen and soaked nuts for 24 hours and I could NOT be happier about it ;)
Raw eggless eggnog to share for the holidays
{Recipe made one whole pitcher.. approximately 6-8 mugs depending on whether or not you choose to add rum!}
2 cups almond milk (store bought if you like, but i&#8217;m a glutton for punishment&#8230;  i used a 1 to 1 ratio of soaked almonds to water and ran thru a sieve)
2 cups soaked raw cashews
2 cups water
1 (heaping) tsp cinnamon
1 tsp vanilla
agave syrup to taste (about a tablespoon or 2)
1/2 tsp nutmeg (i grated about a 1/3 of a nut)
BLEND!
I blended mine in batches b/c it seems to create a smoother consistency, make sure to do so if you&#8217;re not used to the thickness of cashew milk, if you&#8217;re blending all at once you might find it a bit grainy, which doesn&#8217;t bother me but might be &#8220;weird&#8221; for my holiday guests!)
(note to Santa- this would have been a lot easier with a Vitamix, I&#8217;m just sayin&#8217;&#8230;.)

    Made some fresh squeezed goodness to help my honey and i recover this morning…

    One grapefruit, two oranges and two tangelos went into the juicer and voila! Sweet and tangy sunshine in a glass.

Initially I started this blog in a "raw food movement" frenzy. After a little research, the purchase of an awesome cookbook (Living Raw Food by Sarma Melngailis) and a seriously damaging spree at Sur La Table and Lazy Acres... I was obsessed! After a month of full RAW I reintroduced cooked foods to my weekly diet. As of late I've relaxed quite a bit to accommodate my work schedule/budget and social life ;) Im trying to stop eating animal products completely... but I missed eggs too much ( I only buy organic cage free local eggs.)
I still eat a primarily Vegan diet but I'm not going to starve myself or live off granola bars if I'm in a bind. I still drink green juice several times a week, love raw food's and salads, and I'm fascinated by the Macrobiotic craze! (check out Alicia Silverstone's book: "The Kind Diet") I try to incorporate as much of these teachings as I can into my lifestyle.
Yay for Whole grains, REAL food and loving life... and Cooking :)

I'm documenting my journey for anyone interested in recipes or needing a little food inspiration ;)
